Frittatas, pesto & an 8km run

Woke to another cool morning, great for running 8km. There were no ill effects from yesterday’s run so I decided to go a little further today. Perfect! Dedicated my run to Ron, someone who inspired so many with his achievements and sadly and tragically lost his life in a cycling accident. While running I also thought about dad and some friends who have passed away over the years from cancer.The time went quickly, running with memories and ghosts.

This afternoon I made another batch of pesto – this time using Sarah Wilson’s recipe. This recipe uses cashews instead of pine nuts and Parmesan and has a creamier taste. It also uses less oil than the Stephanie Alexander recipe so obviously is not as oily.

20130120-202935.jpgAnd I made some mini frittatas (containing roast pumpkin, zucchini & feta). I lined the muffin holes with thin slices of ham and this stopped the the frittatas from sticking, as well as adding some extra flavour. They’ll be perfect for snacks.
